Lapke is passionate about the agriculture industry, as well as serving the community in which she is placed. She worked for her hometown extension office in Jackson County as a Youth Program Intern in the Summer of 2016, which is what sparked her interest to continue work with Iowa State University (ISU) Extension and Outreach and the Rising Stars Internship. This Summer, she is excited to connect with and gain knowledge from producers in the region, as well as attend events to promote the goodness in local foods and healthy living. In the long term, Lapke hopes to secure a job in the agriculture industry after graduation, with goals of doing work or research in underdeveloped countries. She also shows high interest in governmental work in the field of agriculture policy. At ISU, Lapke stays busy with her extracurricular activities of International Association of Agriculture Students, Agriculture Communicators of Tomorrow, holding a position in her sorority, Alpha Gamma Delta, and working part-time on campus. In her spare time, she takes any opportunity to spend time with her family, tend to her small meat goat herd, travel, and learn new things.  


Leah Brooke

Leah Brooke learned about the Rising Star internship program through a previous Rising Star intern. After learning more about the Rising Star internship program—everything from the library workshops to the county fairs and farmer’s markets—Brooke knew this would be a perfect fit for her. She was a 4-H member in Page county for 9 years and was interested in giving back to Iowa State University (ISU) Extension and Outreach. As a dietetics major, Brooke also sees this internship to be a great learning experience for her future. She is excited to gain insight related to working with local communities and educating people. While serving as a Rising Star intern, Brooke is eager to perform food demonstrations at farmer’s markets and educate children through library workshops.  

Brooke’s career goal is to become a Registered Dietitian (RD). In Spring 2018, she will be applying to multiple dietetics internships across the nation and upon graduation in May, will continue into a required dietetic internship where she will enhance her skills to become a RD. Along with obtaining an internship with a clinical or sports emphasis, Brooke would also like to pursue a Master’s degree. 

In the future, Brooke would like to work as a clinical or community dietitian, but she would also enjoy pursuing a career in sports dietetics if the opportunity arises. Brooke hopes to become a successful dietitian as well as a wife and mother while living on a farm in rural Iowa.  

In her spare time, Brooke enjoys serving as a College of Human Sciences and Food Science and Human Nutrition Ambassador, assisting as a peer mentor for the Hixson Opportunity Award, and being an active member of Kappa Alpha Theta sorority. Brooke also enjoys boating with friends and family, spending time on her family farm, and cooking.


Ruby Hotchkiss

Junior in Graphic Design with a minor in Leadership Studies at Iowa State University

Fueled by interests in community service and horticulture, Hotchkiss became a Rising Star Intern to use her love for design to make a difference in her home state. In the past, Hotchkiss has worked at a flower shop and enjoyed taking environmental studies classes at Iowa State University. To learn more about these topics, she'll be living in "small-town Iowa"  for the summer as a Rising Star Intern. Throughout the summer, Hotchkiss will work with local producers and explore video creation to assist in building their marketing strategies at local farmer's markets. She will also work with her fellow Rising Stars to promote healthy eating programs to children. Hotchkiss is looking forward to learning more about Iowa State University Extension and Outreach and meeting new people! In the future, Hotchkiss hopes to find a job that combines creativity and community improvement, just like the Rising Star Internship! At ISU, Hotchkiss is a graphic designer for Trend magazine, the largest student-run fashion publication on campus, and participates in student ministry. In her free time, she enjoys photographing nature, going to concerts, and gardening (when Iowa weather permints). Over the summer, you'll be able to find Hotchkiss and the Rising Stars at the local farmer's markets, libraries, and around the Region 1 county offices.
