On June 27 the Region 1 Rising Star Interns traveled to the Spencer Riverfront District Farmers’ Market to do a food tasting. After setting up our table, we walked around to all the different vendors to decide on a recipe to prepare fresh right in front of customers.
We decided on a romaine lettuce topped with radishes, sweet white onions, and kohlrabi with a sugar, vinegar, and olive oil dressing drizzled over the top. We served our salad in mini cups to people shopping at the market. It was a great experience teaching people how easy it is to use fresh, local produce and turn it into a recipe! It was also fun to watch people try a new vegetable and liking it. A couple stopped by our table to try our salad and after tasting it they went and bought the same vegetables to make the salad at home!

Here is the recipe for the salad dressing
Serves: 4
2 tablespoons sugar
1 tablespoon vegetable oil or olive oil
¼ cup white vinegar
