Hello again! Another day means another Rising Star adventure! As the weeks go by, we continue to learn more and more about local foods and producers. This week we got the chance to promote them! We were at the Sioux Center Farmers Market on Wednesday June 15 to serve up some local veggies! We call these “Fun with Food Tasting” because its a fun way to try new foods and recipes. Due to the fact that it is early in the season, we decided to created a dish with leafy greens. Traditionally, we purchase all the produce that day at the farmers market, but because there was low amount of stands we had to supplement with some grocery store produce. We started with some romaine lettuce and added in some chopped radishes, red, yellow, and orange sweet peppers, and cucumbers. To top it all off, we added a sun-dried tomato dressing. It was already a great salad but to take it to the next level (and make it easier to eat) we stuffed it in some whole-wheat pita pockets! They were a hit at the farmers market and if I do say so myself, they were pretty tasty! These Simple Salad Stuffed Pita Pockets are a great way to enjoy veggies and it is extremely versatile. Instead of lettuce you can use spinach or kale. You can change up the chopped vegetables by using tomatoes, carrots, or onions.
