Here’s a final update from Joi!
I cannot believe that this is the start of our final week as Rising Star interns. After this week, we will join the galaxy of stars who have all gone through the Rising Star program. I am so grateful for the opportunities and relationships that I have made this summer.
Last week we brought out the blender bike to the Woodbury County Fair and prepared a delicious salsa using a ton of fresh produce from our teaching garden. The blender bike is a fan favorite and always attracts a lot of people to to our demonstrations.
Right after the Woodbury Fair, we drove to Ames to give our final presentation to the other interns, deans, and Extension and Outreach staff. We were able to listen to the various projects that were being done throughout the state. Each region seemed to have a different focus for the summer and it was exciting for everyone to come together and share.
Saturday was our final (and rainiest!) Farmers Market appearance for the summer. I went to the Sioux City Farmers Market and the other two interns assisted Plymouth County with their first market. I took this time to say goodbye to the vendors I had grown to know and love throughout the summer and buy some goodies from my favorite places at the market.
This summer has been one for learning, growing, and so much more. Thank you to everyone who has made this experience a memorable one.
