Cheesy Eggplant Casserole and Karen's Casserole

2medium onions

1/4pound(s)saltine cracker crumbs

1cup(s)cheese
Instructions: 

Boil eggplant and onion in salt water for 20 minutes, drain.  Add margarine.  Add remaining ingredients.  Combine.  Bake at 350 degrees for 1 hour.  Freezes well.
