Cass County Extension to Host FREE Food Preservation Class July 8

Food Preservation 101 is a two-hour overview of general food preservation principles. The class includes current recommendations for canning, freezing and drying, display of equipment and utensils and sources for safe and tested food preservation information.  The program will be held on Monday, July 8 from 6:30 to 8:30 pm at the Cass County Extension office, 805 W. 10th Street in Atlantic. There is no cost to attend, but pre-registration is required.

Updates for Home Food Preservers
“Publications and programs are under regular review and revision and some important changes have been made for this year’s gardening and preserving season,” says Barb Fuller, ISU Extension Human Sciences specialist in nutrition and wellness. “Look to Iowa State University Extension and Outreach for up-to-date, accurate and safe information on home food preservation.”   
ISU Extension offers a library of publications with recipes and instructions for preserving a wide variety of foods, from fruits and vegetables to pickles and meats. These publications are available as free downloads on the ISU Extension Store at https://store.extension.iastate.edu/, or can be picked up at your local ISU Extension Office.
 “These publications are updated regularly, so check the dates and if you have older versions of these publications, throw them away and replace them with the revised versions to be sure you are using current recommendations,” Fuller said.
 
Information will also be shared at this program about ISU Extension’s more in-depth food preservation workshop series;Preserve the Taste of Summer. This series of hands-on food preservation workshops is a great opportunity for those who want to go beyond the basics, according to Fuller. Workshop topics available are: Jams and dehydrating, Salsa, Pressure canning and freezing, and Pickling.  The cost of each workshop is $35 and Cass County Extension is planning to host a session on Jams and Dehydrating on Saturday, August 3rd.  Additional topics will be offered at various locations throughout the summer.
 
Pressure Canner Testing – “Dial gauge pressure canners should be tested annually for accuracy,” Fuller said. Dial gauges will be tested at the end of the program on July 8 free of charge, or lids can be dropped off at the Cass County Extension office at any time for free testing.
 
Home food preserves can also get answers to food preservation questions by calling ISU Extension and Outreach’s toll-free AnswerLine. Experts answer questions Monday through Friday, 9 a.m. to noon and from 1– 4 p.m.
