ISU Extension has six coordinating and recently revised publications with the new food preservation program, Preserve the Taste of Summer. Just ask for
- PM 638 - Canning and Freezing: Tomatoes - Stocking a cupboard or freezer with home-preserved tomatoes can be a satisfying experience, if you have the time and necessary equipment.
PM 1044 - Canning and Freezing: Vegetables - Vegetables are low in acid and require processing in a pressure canner with a weighted control or dial gauge.
