Areas of emphasis: Consumer Food Safety and Food Preservation Issues Sam Beattie joined Iowa State University Extension as Specialist responsible for consumer food safety issues in the Department of Food Science and Human Nutrition. Prior to ISU, he served in Extension at the University of Tennessee and North Dakota State. His Extension research has included funding from CSREES to develop HACCP software for recipe analysis, food safety projects with respect to salmon processing and evaluation of food safety knowledge of WIC educators. His research interests include food and agricultural molds, dairy and food microbiology with respect to quality, and consumer attitudes toward food safety. In addition to consumer food safety, he will handle processor food safety and security topics. Sam is a resource for general food science and composition, food safety and microbiology, as well as processing/quality issues for small to large processors. A graduate of Ames High School, he received his undergraduate degree in Food Technology from ISU. His master's degree is in Dairy Science Manufacturing from South Dakota State University, and doctorate is from Oregon State University in Food Science and Technology. |

Areas of emphasis: nutrition recommendations for health promotion, nutrition recommendations for disease states, nutrient content of foods/products, and general nutrition/health information Ruth received her BA in dietetics from the University of Northern Iowa, MS in nutrition and exercise science from Kansas State University, and PhD in nutrition from Iowa State University. |

Areas of emphasis: nutrition education for limited resource adults and youth, family nutrition, healthy weight promotion, and applied nutrition. Peggy Martin is a veteran staff member of Iowa State University Extension but is new to campus staff as of March, 2003. Peggy started with Extension as a two-county Extension Home Economist supervising EFNEP. In 1975 she was appointed as Woodbury County Extension Director. For the last twelve years Peggy has served as the Area Extension Director for Northwest Iowa . Peggy's current position allows her to work on two of her lifetime interests--leadership and family nutrition. Peggy is Senior Professional in Human Resources. She continues to study leader effectiveness in articulating vision, developing members, coaching and communicating business and customer needs. Peggy received her BA in Institutional Management and her MS in Adult Education from Iowa State University. |
