AMES, Iowa--Free recipes are just one feature of a new offering from Iowa State University Extension nutritionists. "Every week our Web site describes a specific fruit or vegetable, along with a recipe and information about a physical activity," said Ruth Litchfield, ISU Extension nutritionist. "Individuals who want to receive the information as a weekly emailed newsletter can sign up online."
The ISU Extension food and nutrition Web site is located at http://www.extension.iastate.edu/nutrition/.
"Eating fruits and vegetables has been shown to decrease the incidence of certain types of cancer," Litchfield said. "Fruits and vegetables contain a number of antioxidants and phytochemicals that appear to inhibit or interfere with the development of cancerous cells. Minerals, such as potassium, calcium, and magnesium, are found in fruits and vegetables and appear to exert a protective effect against high blood pressure as well."
Choosing fruits and vegetables for snacks and including them in each meal is a healthy habit for kids and adults to adopt.
"We typically think of them only in salads or soups, but summer-fresh fruits are great for smoothies, simple desserts or refreshing snacks. Vegetables can be grilled or sliced and added to a variety of main dishes," Litchfield said.
