10/14/02 FOR IMMEDIATE RELEASE Contacts: Iowa Dairy Producers to Investigate Small-Scale Processing of Specialty Dairy at Upcoming Seminar BLOOMFIELD, Iowa - Iowa dairy producers will have an opportunity to learn about small-scale processing of dairy products at an upcoming workshop on November 13. "Small-Scale Dairy Processing and Marketing," offered by Iowa State University Extension, Davis County Extension, the Agricultural Marketing Resource Center, the Iowa Cooperative Development Center and the Iowa Institute of Cooperatives, will be held at the 4-H Building on the Davis County Fairgrounds in Bloomfield. The workshop will begin at 9:30 a.m. and adjourn by 3:30 p.m. "The dairy industry is expanding within the Midwest and many producers are investigating alternative methods and niche markets for their milk," said Margaret Smith, Iowa State University Extension, sustainable/value added agriculture specialist. "Participants at this workshop will learn about the requirements and steps to developing a value added processing business for dairy products." The event will cover U.S. and Midwestern markets for regional and specialty cheeses and other processed dairy products. Various types of cheeses and cheesemaking will also be covered, including requirements and logistics by Neville McNaughton, a cheese business and technical development specialist from St. Louis, Missouri. Francis Thicke of Radiance Dairy near Fairfield, Iowa, will describe his on-farm processing and marketing efforts.
