2/9/00 Contacts: IPIC Seminar Offered In Two Locations AMES, Iowa -- Pork producers who want to learn the importance and future significance of desirable muscle characteristics should attend the Iowa Pork Industry Center's (IPIC) upcoming seminar, "Muscle Quality Attributes and Market Development." Producers will also learn about the importance of genetics in meat quality during this daylong program. It is cosponsored by Iowa State University (ISU) Extension and the Iowa Pork Producers Association (IPPA) and will take place in two locations on separate dates. The program will be held at the Howard Johnson Airport Express Inn in Cedar Rapids on Tuesday, March 21, and at the Scheman Building in the Iowa State Center in Ames on Wednesday, March 22. Speakers will address topics ranging from measuring pork quality and the importance of ultimate pH to how carcass handling may impact meat quality. Keith Keogh from the California Culinary Academy will discuss how fine restaurants view the importance of taste and texture in consumer satisfaction. Steve Price from the Royal Berkshire Program will discuss using genetic characteristics for market differentiation. Other speakers are Ken Prusa of Iowa State University, Robert Kauffman of the University of Wisconsin, Leonard Huskey of Swift & Co. and Rodney Goodwin of the National Pork Producers Council. Registration at both locations starts at 8:30 a.m. The program begins at 9:30 a.m. and will end about 4 p.m. Attendance is $15 per person for those who pay by March 15. After that date, the cost is $25 per person. The fee includes lunch, morning and afternoon refreshments and a copy of the proceedings.
