Crunchy apple-walnut salad

Makes 6 servings

Ingredients:
Apple-Walnut Oil Dressing

  • 1/4 cup walnut or olive oil
  • 4 Tbsp apple juice
  • 2 Tbsp balsamic vinegar
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper

Salad

  • 5 ounces mixed salad greens (about 6 cups)
  • 4 medium Braeburn or Fuji apples, cored and cut into chunks
  • 2 Tbsp chopped walnuts
  • 1 Tbsp freshly grated Parmesan cheese

Directions:
To make the dressing: In a small jar with a tight-fitting lid, combine all the dressing ingredients and shake well.

To make the salad: In a large salad bowl, combine the salad greens, apples, and walnuts. Drizzle the dressing over the salad and toss until evenly coated. Sprinkle with Parmesan and toss thoroughly.

Nutritional information per serving: 113 calories, 1.9 g protein, 18.3 g carbohydrate, 4.6 g fat, 0.8 mg cholesterol, 3.6 g dietary fiber, 46 mg sodium
