Makes 6 servings
Ingredients:
- 3 tablespoons lemon juice
- 2 teaspoons minced garlic
- 1/4 teaspoons ground ginger
- 1/4 teaspoons ground black pepper
- 2 pears, diced
- 3 1/2 cups cooked brown rice
- 1/2 cup chopped green onions
- 1/2 cup diced celery
- 3 tablespoons vegetable oil
Instructions:
- In a small bowl, combine lemon juice, garlic, ginger, and black pepper.
- Add pears to the mixture and set aside.
- In a large bowl, combine brown rice and remaining ingredients.
- Gently fold in pears.
- Serve immediately or chill in the refrigerator.
