Pear brown rice

Makes 6 servings

Ingredients:

  • 3 tablespoons lemon juice
  • 2 teaspoons minced garlic
  • 1/4 teaspoons ground ginger
  • 1/4 teaspoons ground black pepper
  • 2 pears, diced
  • 3 1/2 cups cooked brown rice
  • 1/2 cup chopped green onions
  • 1/2 cup diced celery
  • 3 tablespoons vegetable oil

Instructions:

  1. In a small bowl, combine lemon juice, garlic, ginger, and black pepper.
  2. Add pears to the mixture and set aside.
  3. In a large bowl, combine brown rice and remaining ingredients.
  4. Gently fold in pears.
  5. Serve immediately or chill in the refrigerator.

Nutrition Information: 240 calories, 8 grams total fat, 40 grams carbohydrate, 3 grams protein, 5 grams fiber, 20 milligrams sodium, 0 milligrams cholesterol.
