Galloping Good Eggplant

Makes 1 serving

Ingredients:

  • Butter-flavored cooking spray
  • 1/2 cup eggplant, diced
  • 1/2 cup fresh mushrooms, diced
  • 3/4 cup fresh tomatoes, chopped
  • 3/4 oz. fat-free mozzarella cheese (such as a string cheese stick)

Instructions:

  1. Spray skillet with cooking spray, heat over medium-high heat.
  2. Sauté eggplant, mushrooms, and tomatoes in skillet until tender.
  3. Drain off extra juice and top with shredded or `peeled' cheese.

Nutrition Information: 95 calories, 3 grams total fat, 10 grams carbohydrate, 9 grams protein, 3 grams fiber, 150 milligrams sodium, 4 milligrams cholesterol.
