Makes 4 servings
Ingredients:
- 1-6 ounce package long grain and wild rice mix
- 2 cups cooked boneless, skinless chicken breast cubes
- 1/2 cup sliced green onions
- 4 plums, sliced
- 2 Tablespoons vegetable oil
- 2 Table spoons lemon juice
- 1 Tablespoon soy sauce
- 1/2 teaspoon ground ginger
Instructions:
- Prepare rice mix as directed then cool to room temperature.
- Combine rice, chicken, onions, and sliced plums in a large mixing bowl.
- In a small bowl, stir to mix together the vegetable oil, lemon juice, soy sauce, and ginger to make the dressing.
- Pour the dressing over the rice mixture and toss until all the ingredients are coated with dressing.
- Chill until served, store covered in the refrigerator.
