Garbanzo Bean Dip
- 1 can (15 ounces) garbanzo beans (chickpeas) or great northern beans (drained and rinsed)
- 2 tablespoons oil (canola or vegetable)
- 1 tablespoon lemon juice
- 2 tablespoons onion, chopped
- 1/2 teaspoon salt
- Mash beans in a small bowl until they are smooth.
- Stir in oil, lemon juice, onion, and salt.
- Refrigerate leftovers.
