Success Stories
Problem:
Many families are pressed for time to prepare meals at home, choosing either to use pre-prepared foods, partially home prepared foods, or restaurant meals. Many families do know that they could make healthier choices, but really don't know where to start. Some people do need to make better choices due to health concerns and think that making those choices are expensive. "Healthy Meals in a Hurry" was developed to meet these needs. Research has shown great impact of family meals on childrens' growth and development.
Response:
"Healthy Meals in a Hurry" was offered as an educational program in three counties in the first quarter of 2009. It was developed from a booklet that includes recipes, nutrient analysis, and some cooking tips. Based on the Dietary Guidelines for Americans and the DASH (Dietary Approaches to Stop Hypertension), the recipes are low in sodium and fat. They do include foods that most people are used to purchasing, but some in a lower sodium form. Preparing food and freezing it to use in the next two weeks, makes home cooking much easier when time is an issue. This helps lower stress and promote family meals.
Impact:
Over 100 people attended the "Healthy Meals in a Hurry” program . Participants represented a wide range of ages and family situations. Those attending indicated they learned more about sodium in foods and how to reduce it. Many were surprised at the amount of sodium in restaurant meals and canned soup. All indicated they were willing to try some recipes, some indicated they would try to complete the marathon cooking session as outlined in the publication.
