Food Safety Success Story
Problem:
Iowa's current food code has been in effect since January 1, 1999. One of the important additions to this code is the "Demonstration of Knowledge" requirement. One of the ways to meet this requirement is to have that person attend and successfully pass the ServSafe Certification Program. Recent legislation is requiring assisted living facilities to have a minimum of one person on staff who is certified in food safety. The ServSafe Certification Program meets this requirement. Further, as families purchase more ready-to-eat foods from grocery and convenience stores, it is important that staff in these facilities understand food safety principles.
Response:
In 2004-05, with the assistance of Susan Uthoff, Nutrition Field Specialist housed in Linn county we have instructed 104 persons in the ServSafe program. These persons attended one of five different sessions held in either Linn or Johnson County. We have had several Asian and Hispanic speaking persons enroll in the course and take the exam.
Impact:
Of the 104 persons participating in the classes, 90 met the certification requirements - 87% passed the exam. A three month follow-up survey shows that participants worked with their staff to focus even more attention to hand washing and temperature monitoring (both major food safety issues). They reported an increase in monitoring hand washing and temperature after attending the class. Increased understanding of the role of gloves and appreciation of attending the class even when the purpose was re-certification. They indicated that attendance helped reinforce and renew their interest in food safety. Proper cooling of food was also mentioned as a behavior that had changed in a positive way - the establishment is now making sure leftovers are cooled quickly in shallow pans.
