Hospitality Management Professors Catherine Strohbehn and Susan Arendt and three doctoral candidates represented Iowa State University at the Foodservice Systems Management Education Council (FSMEC) Biannual Conference held in Columbus, Ohio over spring break.
Both professors are members of the Administrative Council so they also attended the Board meeting held prior to the conference.
Graduate Students Ungku Fatimah Ungku Zainal Abidin and Carol Klitzke presented their dissertation research at the conference and fellow graduate student Nathan Stokes also attended. Fatimah’s work, co-authored with major professors Arendt and Strohbehn, focused on development of a tool to assess the food safety culture of onsite foodservices.
Carol presented findings from the qualitative phase of her research which consisted of case study analysis of food defense in school districts. Their work was partially funded by FSMEC.
Susan Arendt, Cathy Strohbehn and Lakshman Rajagopal presented at the first Poster Session about engagement of undergraduate students with their food safety research.
The history of Iowa State University Hospitality Management faculty leadership with this organization continues as Dr. Strohbehn will serve as Newsletter Editor for the two year term.
