John Kramer, Dr. Lakshman Rajagopal, and Nathan Stokes are infusing local foods into Joan Bice Underwood Tearoom and Fine Dining Management menus. With support from ISU Extension and Outreach, students are using fresh produce and herbs from the Tearoom Herb Garden, located outside MacKay Hall.
The Herb Garden was planted in 2012 with support from an Extension and Outreach Team Nutrition project led by Extension Specialist Catherine Strohbehn.
The Hospitality Management classes have continued cultivation in order to enhance flavors of foods prepared and help students better understand where and how food is grown. The Herb Garden is located outside of MacKay Hall.
