Food safety and food defense are significant issues in the United States. The Centers for Disease Control and Prevention estimate that 76 million illnesses, 325,000 hospitalizations, and 5,000 deaths result from foodborne illness each year. As key players in the world food market, Iowa's leaders need to be trained in Food Defense to reduce the probablity of intentional contamination along the food chain.
The Hotel, Restaurant, and Institution Management Extension program, in cooperation with other departments at Iowa State University and organizations, is committed to providing educational opportunities for operators to improve the quality and safety of food served in the state of Iowa and beyond.
