Eggplant
What to look for:
- Firm, shiny and uniform color
- Medium to large size
- Small blossom scar
- Fresh green calyx (leaf-like cover of the flower)
What you don’t want:
- Too small or immature
- Off or dull color
- Dry calyx
How to prepare the eggplant:
- Leave 1 inch or stem
- If necessary, wipe with a soft cloth
Suggested exhibit quantity:
- State Fair: one specimen
- County Fair: Check your fair book
