Eggplant

What to look for:

  • Firm, shiny and uniform color
  • Medium to large size
  • Small blossom scar
  • Fresh green calyx  (leaf-like cover of the flower)

What you don’t want:

  • Too small or immature
  • Off or dull color
  • Dry calyx

How to prepare the eggplant:

  • Leave 1 inch or stem
  • If necessary, wipe with a soft cloth

Suggested exhibit quantity:

  • State Fair: one specimen
  • County Fair: Check your fair book
